Seagulls celebrate new bistro launch

Well-known Tweed Coast chef Sylvester Coutinho is the man behind a brand new cafe and bistro set to put the Seagulls Club back on the culinary map.
The new Stars Cafe and Bistro was launched late last month, with Coutinho and his staff offering local dignataries and guests a sneak preview of what is on offer.
“We want to make Stars Cafe and Bistro at Seagulls the talk of the town of Tweed,” the award-winning chef and owner of Sea Salt Ristorante at Salt Village, said.
Coutinho said he was familiar with the demands of local diners through building his Kingscliff following and was looking forward to this new challenge.
“They are discerning and seek variety and value,” Sylvester said.
“Variety is well catered to in a menu that boasts such mouth-watering dishes as slow roasted Casino Beef Ribs, Chicken and Prawn Paella, freshly shucked local Oysters and crispy skinned Pork Belly with Moreton Bay Bugs.”
Sylvester Coutinho has had more than 35 years’ experience in the hospitality industry, training as a chef at the famous Taj Mahal Hotel in India, as well as working in five-star hotels in Bahrain, Egypt, London, Iraq, Iran, China and Australia. He has worked at Ramada, Hilton International, Sheraton, Parkroyal, Hyatt and Radisson hotels.
Seagulls Group CEO, Luke Simmons, said he hoped the new bistro would stand out for its quality and prices.
“We’ve brought Sylvester Coutinho and his team in to create this new bistro because of their award-winning track record and reputation of making the most of fabulous fresh local produce,” Luke said.
“We are very pleased to present Stars Cafe and Bistro to the Tweed and we’re sure it will quickly build a reputation for delicious food in a sociable, relaxed atmostphere.”
