ALTONA brothers Yong and Shane Liuw can proudly say they make the best Belgian waffles in town because they learnt from a master himself.
The brothers at Waffee: waffles and coffee in Altona want to start a waffle revolution one tasty treat at a time.
The brothers opened Waffee just over a year ago and have quickly garnered a good reputation for their delicious Belgian-style waffles and trained barista skills.
The handcrafted, authentic Belgian Liege waffles are made from an old secret family recipe that the brothers learnt while travelling in the country.
“The core to having this business is that we’re both very passionate about food,” Yong said.
“It was just by chance through our travels that we came about a waffle store and it was just a Eureka moment that came about that there aren’t many waffle stores in Australia.”
The brothers were fortunate enough to meet a retiring Belgian “waffle master” during their time spent in the country who was happy to bestow his own family recipe which they use today.
After spending time with the waffle master the brothers learnt how to become bakers.
“It’s really hard work … and that’s why he said not a lot of people are doing this anymore, it’s a dying art,” Yong said.
Using the traditional recipe the brothers have mastered their own original waffle by creating new tastes and flavours including blueberry, chocolate stick, traditional and the popular raspberry and white chocolate.
“The idea is to re-create that old sense of tradition, we want to re-new it and modernise it,” Yong said.
The brothers said unlike traditional waffles, their style stands alone in taste without adding toppings like ice-cream.
“We want to revolutionise waffles because in a sense we want to re-create a love for it we don’t want it to be an old forgotten waffle,” Shane said.
“It’s not just about food it’s about service as well. That’s what we try to emphasise here,” Yong added.
The brothers invite people to come into Waffee at shop 25 Harrington Square for a waffle and coffee and be their own judge.
