Eating the rainbow

Sandra Groundwater of Gingers on Horseshoe Bend is a firm believer in “eating the rainbow” — enjoying a colourful variety of fresh fruits and vegetables every day.

“I aim for ten different ones daily,” she says.

“I love a good steak, but sometimes I’ll just have something like stuffed mushrooms with cheese and a big plate of veggies.”

For decades, Sandra has eaten the same good, healthy, local produce she sells, and she’s proud to say she’s never had the flu.

“That’s the power of a nutritious diet,” she insists.

Her daily rainbow might include red capsicum and tomatoes, orange pumpkin and mandarins, yellow squash and bananas, green beans and broccoli, blueberries, purple Hawaiian sweet potatoes and grapes, pink radishes and dragon fruit, and creamy white potatoes.

To Sandra, food isn’t just fuel — it’s medicine, and every colourful bite is a step towards better health.
